Keto Greek Chicken is a staple recipe in my house. The flavours are so delicious that it is the perfect recipe for when we have company over. We often have all the ingredients on hand which makes it even easier. I find recipes like keto greek chicken, that have the most basic ingredients to be the most delicious! The only fresh ingredients you need on hand is the chicken thighs and the lemon – the rest are pantry staples!

You can substitute the chicken thighs for chicken breast however chicken thighs were MADE for a dish like this!
Get your Kids Involved
This marinade is so simple, you can even get the kids involved! My daughter Taylor didn’t want to eat chicken with the marinade but she eagerly helped me prepare it which is a great way to get her involved and off the iPad! I like to use a measuring cup to quickly measure the ingredients. These Pyrex measuring cups are a staple in our kitchen.
Lemon zest add the freshest lemon flavour to this keto greek chicken marinade. Don’t skip this step!!!
Cooking Method for Keto Greek Chicken
It was a warm winter day here, so we turned on the bbq for the first time in months! If you can’t bbq you could roast these skewers in the oven or even pan fry on the stove top. Just make sure it gets to the 165 degree F internal temperature. The chicken from truLOCAL was out of this world amazing!
There was a lot of marinade left over. Feel free to save half for another day or double the amount of chicken you use. Tossing the chicken cubes in a bag with the marinade and putting them on the skewers before cooking is another great option. You can also skip the skewers all together and marinate the chicken thighs whole. I don’t have the nutritional info for this marinade because I’m not that savvy at this recipe blogging stuff yet! This is a keto friendly recipe, the red wine vinegar had some carbs but it seems liked very little was absorbed by the chicken. Ingredients
- 5 boneless, skinless chicken thighs - truLOCAL meat is AMAZING! Coupon code: KETOCANADATOP for free steak on your first order
- 5 metal or wooden skewers
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- Zest of half a lemon - You can use a zester
- Juice from 1/2 a lemon - You can use you hand or a lemon juicer
- 1 clove of garlic chopped (can use minced, or dried garlic as well)
- 1 tbsp fresh or dried rosemary
- 1/2 tbsp fresh or dried oregano
- 1/2 tbsp Himalayan pink salt
- 1 tsp pepper
- Olive oil for the grill
Instructions
- Cut your chicken thighs into 1" chunks
- Slide 6 - 7 chicken pieces onto the skewers
- Combine remaining ingredients and whisk to combine
- Place skewers into a shallow baking dish or other container (glass or plastic preferred) and pour marinade over the top. Ideally the skewers will be completely covered.
- Marinate chicken for at least 2 hours, preferably overnight.
- Pre-heat BBQ to medium high
- Brush the grill with olive oil so the chicken skewers don't stick
- Place each skewer on the grill for 6 - 8 minutes. Keep a close eye on them so that they do not burn.
- Flip each skewer for another 6-8 minutes until the internal temperature is 165 degrees F
- Enjoy! Add tzatziki dressing (I like SummerFresh from Wall-Mart) for the most delicious meal!
- I had this with a simple greek salad with romaine lettuce, tomatoes, feta cheese. I also pan fried some riced cauliflower in butter with salt and pepper.
